Children's Museum

Last Saturday we went to the Children's Museum just to try to get our money's worth from our membership. On the membership note, I don't think we would ever get one to a museum again. Once you're there once, the next visits aren't as entertaining (coming from what I think is Callie's point of view) - she still has fun, but I would rather just maybe go once or twice a year, unless the exhibits change more frequently. The zoo is probably the only membership I would consider buying, but with the weather around here it may not be worth it either.

But anyway, we did have a good time and here are a few pictures.

Happy Birthday Josh!!!

Happy B-day to Josh, Caleb's twin brother! And also, this has nothing to do with their b-days, but isn't Elliot cute?!?!!!

HAPPY BIRTHDAY CALEB!!!

30 YEARS OLD!

Gallie and I woke up early (way too early!) to make the b-day cake. I frosted it, but she completely decorated it herself :)

Mmmm... Woody wants a piece!

We woke Caleb up a little less early, but still too early for him - see first picture above :) He then make his own b-day breakfast of crepes cause I haven't quite mastered them yet. They were really good!

After breakfast we went berry picking!

After that, we came home for lunch and watched Cars 1 because we had a date to see... Cars 2!!!

Cana and Grandma D'j went to the movie and then came back to our house for dinner - I made fish tacos, as requested by Caleb. And then we cut the cake! (Just 3 candles instead of 30)

I think Caleb had a really good birthday - we were originally going to go on a little trip, but decided just to stay home and have a mellow day - it was really nice. I only have a month before I turn 30 so I better enjoy it!!!

A few other things that happened this weekend:

A sleepout on the pullout couch! And Gallie's new Sarah dino that Meast found at Goodwill! If I haven't mentioned it, Gallie is obsessed with The Land Before Time movies :) She hasn't put that toy down all weekend!

Gram Jennie made me this blanket - I really love how it turned out. I saw something similar on another blog and asked her if she could copy it - she had it down in a couple days! Thanks Gram!

And I made jam... which was a bust :( It tastes pretty good, but it just didn't set. It's more like a strawberry sauce. I got a few pointers from my mom so I'm going to try it again. If anyone wants a jar of sauce, just let me know :)

Caleb

In anticipation of Caleb's b-day Sunday, here are a few pictures from his childhood. Don't even ask me who is who, other than if it says so on their shirts! I don't even think Caleb can tell in most of them :)

Berry Picking

Today was the first berry picking day of the season! Gallie and I picked 10 lbs. together - I plan on making my first batch of jam this weekend :)

Evidence of more berry eating than picking :)

Libby and Lily came with us and we finished up the day with lunch at the park (a really, really cool and big park in Lynden) and fresh ice cream from the dairy (exept for Gallie, of course, who doesn't like ice cream, cake, cookies, chocolate, or pie!).

Breakfast in a Jar

One of my favorite breakfasts is overnight oats. I first got the idea for this from my favorite blog ever, KathEatsRealFood. I've adapted it a bit, so here is what I do:

Mix 1/3 cup milk (my fav. is coconut milk, but any kind works), 1/3 cup rolled oats, 1/3 cup plain greek yogurt (or any yogurt), a tiny pinch of salt, and 1/2 tsp. chia seeds (optional, but it makes it "fluffy"). Layer with fresh or fozen fruit (I used peaches and strawberries below) and top with granola* or crunchy cereal. Let it sit overnight in the fridge and it will be ready for breakfast in the morning! I like to use a glass jam jar because they don't leak and it looks pretty :)

*My Homemade Granola (pretty much the best granola ever!)

Comine in bowl and mix:
4 cups rolled oats
1 1/2 cups chopped nuts (I use almonds and pecans)
1 1/2 cups dried fruit (I use a combo of cranberries, cherries, raisins, and cherries)
2 cups coconut
2 Tbsp. chia seeds
2 Tbsp. flax seeds
pinch salt
1/3 cup honey
1 cup oil (I use safflower because it's tasteless)
1 tsp. cinnamon
If on hand, I throw in a couple scoops of coconut butter or pumpkin butter.

Pour into baking pan and bake at 350 degrees for 30 minutes, stirring every 5-7 minutes. If you like it more chewy, which I do, bake for 25 minutes. If you like it really crunchy, bake for 35 minutes.

Lastly, here is a picture of Caleb modeling his new "murse" (manpurse) he got for Father's Day. And a really cute drawing Gallie made him! His old one was really gross and I made him throw it in the garbage can :)
